Someone correct me on this if im wrong, but i dont think you can run dos games in windowed mode.
Stuff concerned with display, as dos games handled colours differently.
You can, however, run a separate program, like dosbox and play dos ufo there. I'm not sure if it works with the collectors edition, but maybe.
In dosbox you can play in window and in fullscreen.

Just search for DXWnd, you may get what you want...

if you want to run a game in window mode then right click on it, go to properties and then on the shortcut tab you should have "Run: (window selection here)"

Really it'll vary depending on which version you've got. The dos version can be played in windowed mode by pressing alt+enter, or run it in Dosbox and ... well do the same thing! Or, if like me, Dosbox will only run windowed mode, your problem's solved.

For the Collectors Edition/Gold Edition/Windows Edition (they're all aliases of the same thing by the way), it doesn't have a windowed mode. Seb76's suggestion may prove useful.
