Assuming you're talking about X-com 1, the music are simple midi files which you can listen to with windows media player, located in the 'SOUND' folder.

Sound effects are in the same folder and are called samplex.cat, you can open them with cooledit, check this topic: http://www.xcomufo.com/forums/index.php?showtopic=4445

The reason I posted was because I tried playing the .mid files and they appear to be blank - I get no sound out of them as they play.
